The Rotary Rock-n-Ribs is excited to host Travis Clark’s barbecue cooking class on March 17 and 18, 2017 at the AmericInn Hotel & Conference Center in La Crosse, Wisconsin. Travis and his team ‘Clark Crew BBQ’ are from Yukon, Oklahoma, and they proudly share their Southwest Kansas roots in their KC Barbecue style of cooking. The Clark Crew BBQ Team consists of Travis and his wife, Kimberly, and their four children, Jennifer, Madison, Brooklyn and Cooper. Since 2014, Clark Crew BBQ team have won 26 Grand Champions, 14 Reserve Grand Champions and consistently have placed in the top ten in the country, including winning numerous 180 and 700 pins all the while competing with some of the best teams. The Clark Crew BBQ Team have also received the 2015 KCBS Team of the Year and placed 5th in the 2016 Sam’s/KCBS Team of the Year.
Travis’ class will be an in-depth “tell all” class that includes: meat selection, trimming, preparation, and seasoning; temperature and pit/fire management; cover all rubs, injections, and sauces used; techniques and strategy; complete KCBS timeline from start to finish; presentation, taste and tenderness; gift bag with product and swag; and a prime rib dinner Friday night and a full breakfast Saturday morning. The class will begin on Friday, March 17th at 4:00 pm and end approximately 3:30 pm on Saturday, March 18th, or until all questions are answered. The cost of the class is $650, additional teammate is $500, and spouse is $300.
